The queso is made from aged cheddar cheese, tomatillos, tomatoes and a blend of peppers.
Steve Ells, founder, chairman and CEO of Chipotle, said in a news release queso was not added to the menu sooner because they wouldn’t use the additives found in most cheese sauce.
“Additives make typical queso very consistent and predictable, but are not at all in keeping with our food culture. Our queso may vary slightly depending on the characteristics of the aged cheddar cheese used in each batch, but using only real ingredients is what makes our food so delicious,” Ells said.
Customers can order queso on their entree or as a large or small side.
