Wine me, dine me pick of the week: Usually spreadable, these rillettes you can sink your teeth into

The former Boca space is reimagined as a New American restaurant influenced by the partners' travels and the best possible ingredients.

My monthly dinner group picked this place--fortuitous, as I'd wanted to try it for a while. I kept trying to go on a Monday, when they're closed! It was worth the wait.

The menu is composed of small, shareable plates as well as large ones. To try the maximum amount of bites (without gorging ourselves), we picked a few small plates. The standout? Pork rillettes.

Instead of the standard spreadable form, the dish was formed into a patty and fried, topped with a six-minute egg (a soft boiled egg that's been boiled for -- you guessed it -- six minutes), pickled shallots, frisée and braising jus (the liquid meat was braised in).

I love pickles, particularly their pairing with something rich and crispy like these rillettes. We paired this with two other (excellent) small plates: shrimp and grits and fried calamari, which made for a great meal. You can pair the dish with Red Feather's extensive, well-priced wine list, local beer, or their craft cocktails.
