CINCINNATI - A pastry chef at the Cincinnatian, Russ Wheeler, stopped by 9 News At Noon to treat us to his Flourless Chocolate Cake.

 

Flourless Chocolate Cake

Chocolate 1 lb.

Butter   8 oz.

Eggs     8 each

Melt chocolate and butter together over a simmering water bath or in short 20 – 30 second bursts in a microwave.

Whisk eggs in a stand mixer for 6 – 8 minutes.

Fold egg foam into chocolate and butter.

Poor into cake pan, bake at 325 degrees in a water bath until the internal temperature of the cake reaches 140 degrees, about 30 minutes.

Mango Sauce

Two ripe mangoes

Juice of 1 lime

Sugar 2- 3 T

Cayenne pepper to taste

Peel and dice mangoes

Put all ingredients into a blender and puree till smooth.
