It’s T-minus two days ‘til the Super Bowl. I know this because the pre-game shows started 48 hours ago.
Here’s what you’re missing if you haven’t watched them yet:
Harbaughs, deer antlers, chicken wing shortage, Dan Marino’s love child, media day, Kaepernicking, Ray Lewis crying, commercials, blah, blah, blah.
Listen, I know my way around a depth chart just fine, and this year’s Super Bowl – on the field -- is actually pretty interesting for many reasons. But let’s be honest: the super buffet at Super Bowl parties is the real star of the show.
And just as I offered up a few of our family favorites during March Madness, here are a couple of guaranteed touchdown recipes for your Super Bowl party:
Buffalo Chicken Dip
Chicken wings right now are more expensive than boneless chicken breasts, per pound. So why not run an end-around and have that same buffalo wing flavor with less fat and fewer calories – and spend less money?
4-6 (more or less, this isn’t exact) boneless, skinless chicken breasts
1/2 bottle Buffalo wing sauce
1/2 bottle ranch or bleu cheese dressing (your choice)
8 oz. cream cheese
2 cups shredded cheddar cheese
Fritos Scoops, crackers, or Tostitos Scoops
Boil chicken and shred with two forks. Add wing sauce and dressing, mix to coat and set aside. (You might want to add less wing sauce if you don’t like it super spicy. Test it – you can always add more later). Spread cream cheese in bottom of 13x9 baking dish. Add chicken mixture. Bake at 350 degrees for 20 minutes, or until hot. Add shredded cheese, heat until cheese it melted. Beware: this will be molten lava when you pull it out of the oven.
I like to serve this with Fritos Scoops, since it’s a heavy dip, but crackers or Tostitos Scoops would work fine. Just be sure to have a spreader on hand.
Sausage Cheese Balls
This is a classic just about everyone loves. I saw it (most recently) when Trisha Yearwood made them on her show on Food Network. Her recipes are great, because they’re simple and familiar, with a twist. This one couldn’t be easier.
16 oz. spicy sausage
10 oz. shredded cheddar cheese
3 cups baking mix (like Bisquick)
Add raw sausage to cheese in bowl, mix with beater. Add baking mix a little at a time, and beat until blended. Form into 1-inch balls and bake on ungreased cookie sheet for 20 minutes or so at 350 degrees, or until browned.
Eat. Enjoy. Repeat.
