WALNUT CREEK, Ohio - Texas Caviar by Lee Ann Miller, Miller Haus, Ohio Amish Country

1 can Hominy- drain and rinse
2 cans black-eyed peas- drain and rinse
4 tomatoes- diced & drain of some of the juice (Roma work best, they're firmer)
1 bunch green onions- diced
2 jalapeno peppers- chopped
1 medium onion- chopped
2 cloves garlic- diced
1-2 green peppers- chopped
1- 8oz. blended Italian dressing

Mix all ingredients together. Refrigerate and serve with corn chips (we like the "Scoops"). *Note- if your veggies have excess fluid, drain some of it off before adding the Italian dressing. Great make ahead recipe and even better after 24 hrs. of marinating.
