How to make a simple Valentine's Day dinner

CINCINNATI - If you want a super easy meal to make for Valentine's Day, then check out the recipe below from local personal chef Jaime Carmody.

The meal is called Jaime's Cozy Shrimp, which includes a filet and shrimp on couscous.

It serves for two and includes the following ingredients:

1 tsp - Olive Oil
2 cup - Baby Spinach
1/4 cup - White Onion (chopped)
1 tsp - Garlic (minced)
1 pinch - Nutmeg (fresh)
1 pinch - Salt & Black Pepper
1 oz - Goat Cheese, Bleu Cheese, Feta, Cream Cheese, Mozzarella…
8 ea - Jumbo Shrimp (peeled & de-veined, leave tails on)
2 slices - Bacon (cut in half width-wise)

Heat oven to 375°F.  

In a sauté pan, over medium high heat, warm the oil.  Add the onion and sauté for 2-3 minutes, until beginning to cook, but not brown.  Add garlic, cook for 30 seconds, and add spinach. Stir until slightly wilted. Add nutmeg, salt & pepper, stir well, remove from heat.  Cool slightly, add cheese, and stir well to combine.

Place the shrimp on a foil lined baking sheet, in a yin/yang shape. Place the head of one shrimp, into the body of another shrimp, creating a circular base.  Divide spinach & cheese mixture into 4 portions, and place on top of shrimp base.  Wrap one half piece of bacon over each shrimp w. stuffing, and tuck ends under shrimp, return to sheet pan.

Bake in oven for 15 minutes, or if you desire crispier bacon, bake 15 minutes, and broil for 3 minutes.  Serve as an appetizer, salad accompaniment, or as part of dinner.
