3 oz. dark rum (optional)
3 oz. organic pineapple juice
4 oz. Wild Oats Premium Organic Coconut Milk
2 tbsp. simple syrup
2 c. crushed ice
Fresh organic pineapple spear for garnish
Combine first five ingredients in a blender, pulse to mix. Pour into a cocktail glass and garnish with a pineapple spear.
Simple Syrup
1 c. organic sugar
1 c. water
Bring sugar and water to a boil in a saucepan. Turn down to a simmer and cook for 2 minutes, until sugar dissolves. Allow to cool. Store in refrigerator for up to two weeks.
